I absolutely love a good Spinach Artichoke Dip. I offered to bring one to our annual New Year’s Eve party this year. I quickly realized that I had never actually made Spinach Artichoke dip! I used to buy the one at Costco that was really yummy but they don’t sell it anymore. I search around for some recipes. My husband hates onions so I needed a recipe without those and I don’t like mayonnaise in artichoke dip. I found a couple recipes but nothing exactly what I was looking for. I mixed a few together and adjusted some things and made this one up!! I added lots of artichokes to this recipe so you can really taste them. I also love how soft and creamy it is. It was a huge hit and everyone was asking for the recipe, so I wanted to share it with you all!!
Spinach Artichoke Dip
Preheat oven 350 degrees
serves 15-20
Ingredients:
1/2 C. Sour Cream
1.5 blocks (12oz.) Cream Cheese
2- 12oz. Jars Marinated Artichoke hearts
1 package, Frozen spinach (thawed and hand squeezed)
1- 6 oz. Package Grated Parmesan Cheese
1- 8oz. Package Shredded Mozzarella Cheese
Juice of 1 Lemon
4 Garlic cloves
1/4 C. Extra Virgin Olive Oil
Salt and pepper to taste( I like a lot of salt.)
Serve with- Chips, Carrots, Celery, Sliced baguette, Pita bread, ect…
Soften the cream cheese and add to a large bowl. Add sour cream, parmesan and mozzarella cheese, lemon, oil, garlic, salt& pepper. Stir until mixed. Drain Artichoke hearts and roughly chop. Add to other mixture. Remove spinach from package ,after it’s thawed and squeeze remaining water from it and add to the rest of the ingredients. Mix well and pour mixture into a greased baking dish. Bake at 350 degrees for 35 minutes. Stir add more salt if needed and cook 5 more minutes.
Serve Hot.
