Dole Whip Cupcakes

Absolutely delicious tropical treat! Vanilla cake infused with crushed pineapple and pineapple buttercream is sure to make you wanna stick your toes in the sand.

Equipment

Ingredients

  • 1 French Vanilla Cake mix
  • 1 cup Sugar
  • 1 cup Flour
  • 1 Coconut Cream Instant Jello pudding Small box
  • 1 cup Sour Cream
  • 2 TBSP Vegetable oil
  • 4 Eggs
  • 1 cup Crushed Pineapple
  • 1/4 cup Pineapple Juice

Pineapple Buttercream Frosting

  • 4 sticks Salted butter
  • 2 Lbs Powdered Sugar
  • 1/4 Cup Pineapple Juice
  • 1/4 Cup Heavy Cream

Garnish

  • 1 Pineapple
  • 1 pkg striped straws cut each straw into 3 little mini straws

Instructions

  • Mix all wet ingredients together.
    Sift all dry ingredients and add them to wet ingredients.
    Bake @ 325 for 14 minutes
    Makes 48 Cupcakes.

Notes

Use a medium sized ice cream scoop to put batter into baking cups. This will help make them all even.
